This workshop is a part of the CHOW CHOW Festival in Asheville, NC! From kimchi to kombucha, and from cheese to beer, fermented food and drink has reached new heights in the hands of talented chefs and food artisans. Join an acclaimed local chef as well as a maker of handcrafted fermented food on a culinary journey discovering the joy of fermented foods. Taste your way through classic recipes and new sensations while delving into the wide range of ways mountain folk have long deployed friendly bacteria to transform ingredients into delicacies that are healthful, flavorful, and shelf stable.

The two basic types of vegetable fermentation, self-brining like sauerkraut and kimchi as well as, brined vegetables like pickles will be covered. You will walk away with ferment recipe ideas, culinary applications of fermented foods and a secure understanding of how fermentation will cut your food waste, reduce food budget and increase your nutritional value. Small bites: Ending food waste in WNC 2019

Since 2017, Food Waste Reduction and Recovery WNC has held quarterly meetings throughout the the state’s westernmost counties as part of its ongoing mission to unite, educate and support communities in ending food waste and food insecurity. On Saturday, Feb. 23, the group will continue its efforts with a gathering at the N.C. Cooperative Extension Services building in Marshall.
